My wonderful sister in law sent me a box of Meyer Lemons. I love Meyer Lemons, so the first thing I did was preserve several of them for later recipes.
I quartered them and then used a couple of other just for their juice and put the juice and lemons and about 2/3 cup of salt (kosher) in a Tupperware container and stored in the refrigerator.
A couple of days later I was sauteing fish on the stove top and added several of the preserved lemons and a bit of their juice, cooked it down and then added butter. it was pretty amazing.
